It’s Monday!!!! I have no idea where the weekend went….but, it’s Monday and officially fall! As much as I love the cooler temps for running (and believe me, they feel really good!!!) and all of the pumpkin recipes and caramel apples…I kinda just love summer and can’t believe it is over!!!
Speaking of recipes…we are TOTALLY making these…like tomorrow!!!
3/4 cup flour
1/8 cup chopped pecans or walnuts (nuts are optional)
1 teaspoon baking powder
1 teaspoon pumpkin pie spice
a pinch of salt
1/2 cup fat free milk
1/8 cup brown sugar, packed
1/2 tablespoon vegetable oil
1/2 teaspoon vanilla extract
1 large egg
1/2 can pumpkin puree
1. Combine first five ingredients in a large bowl (or your mixer), reserving half of the chopped nuts for garnish.
2. Add milk, brown sugar, oil, vanilla and egg, and beat until well mixed. Stir in pumpkin until well combined.
3. Spray a non-stick pan lightly with butter-flavored cooking spray, and heat over medium heat. Scoop about 1/4 cup of the batter into the pan per pancake.
4. Turn pancakes when the tops are covered with bubbles and the edges look cooked.
5. To finish, sprinkle with the remaining nuts, and drizzle with maple syrup.
This weekend went by sooo fast! We took the kids to visit some of our IL friends at a high school volleyball tournament Friday night. They had a blast and the team got 2nd in the tournament…Go Eagles!!!!
Sat we had our 2nd game…and won! 1-0…go Tigersharks!!! I got my run in before our game and kept it on the easy side…just making sure my leg is okay. 8 miles at an 8:19 pace.
Sunday is normally a day off but since I took Wed and Thurs off last week and my leg is feeling better, I did 7 miles at an 8:11 pace. It feels weird to run Sunday! I wanted to go before church…but that didn’t happen so it was an afternoon run. It was an absolutely beautiful day!!!
Last week did not go as planned, but what does?! :). I ended up taking 2 unplanned days off and skipping my long run. I really only had a 12 mile long run planned Friday, so the switch wasn’t major.
Today’s run was supposed to be a 12 mile marathon pace run (7:22). I say it went pretty good! I ended up doing an 11 mile marathon goal pace run. At mile 11 my leg started hurting so I finished out that mile and walked/recovery jogged the rest of the way home. I also did the 11 miles at a 7:13 pace…it just felt good. It didn’t feel too hard…I will HAVE to be SO careful not to go out too fast for my marathon!!!!! (I do it all the time).
The meal plan this week is….no plan! The hubby is traveling and has meetings this week so we are going to be totally laid back! This is a good time to clean out the cupboards and make a bunch of fun kid friendly recipes. Breakfast for dinner is definitely happening at least once :)!
